Have you ever heard of “Kakinoha Sushi“, a traditional dish beloved in Nara?
Otakichaya was the first to sell this delicious dish. Let me introduce you to the details.
Overview and characteristics of Otaki Chaya
Otaki Chaya was the first to sell ”Kakinoha sushi“.
This dish is made using a special method in which salt is added to the mackerel belly and left to rest for about three weeks, suppressing the fish’s texture and bringing out the flavor of the fat.
In Kawakami Village, the sushi is seasoned with salt rather than vinegar, which gives the persimmon leaf sushi a dry taste.
Otaki Chaya is known for following this traditional manufacturing method and not using any preservatives or additives.
Otaki Chaya is located along National Route 169. The Yoshino River flows across the store.
Nearby, you can enjoy a spectacular view of the Yoshino River and steep rock faces.
There are stairs behind the store that take you down to near the Yoshino River. The beautiful emerald green water surface of the river and the impressive vertical cliffs make it the perfect spot for a break.
Kakinoha(persimmon leaf) sushi
Because it is seasoned with salt, the taste is very different from vinegar.
Vinegar sushi is sweet, like pressed sushi, but salt sushi is dry. As simple as it is, the scent of persimmon leaves and slightly fermented flavor spreads in your mouth.
Kurao Forestry Memorial Quay Inscription
Right near Otaki Chaya, there is a quay with carved characters.
This monument was created in 1921 to praise the achievements of the founder of Yoshino forestry, King of Forestry, Shozaburo Tsuchikura,'' and is engraved with the words
Tsuchikura Okina Forestry Memorial.”
The total length of the inscription is 23.6m, the size of each letter is approximately 2m, and the depth of the letters is 36cm.
