What is Kakinoha-zushi? (kakinoha=persimmon leaf)

”Kakinoha-zushi” is a local dish of Nara and Wakayama (as well as the Kaga region of Ishikawa prefecture and the Chizu region of Tottori prefecture). That’s what I mean.

The persimmon leaves used are astringent persimmon leaves that contain a lot of tannin. It seems to have a unique flavor.

How long will it last?

As mentioned above, vinegar and tannins have a preservative effect, but how long does it last?

Persimmon leaf sushi specialty stores require 3 days, including the date of manufacture.

How to save?

Basically, it should be stored at room temperature, but it is best to avoid direct sunlight, a well-ventilated place, and a place where the temperature is not too low.

So, if the conditions are met, it seems that you can take it home as a touring souvenir.

If it is midsummer and the room temperature is high, it will be a refrigerator.

If it gets hard, just microwave it a little bit to bring back the flavor, but be careful not to overdo it.

If you’re coming by train, it’s Kintetsu or JR Yoshinoguchi Station.If you’re coming by car, it’s just a little east of Route 309.

If you go around the Kii Peninsula and return to Osaka, you often pass by Route 309, so why not stop by?
